Jatz Cake
  1. Pre-heat oven to 170 degrees celsius, fan-forced.

  2. Grease cake tin.

  3. Process Jatz and pecans in a chopper or food processor (or chop finely with a knife).

  4. Beat egg whites and salt until foamy.

  5. Gradually add sugar to egg whites, continuing to beat until the mixture is stiff and glossy.

  6. Fold in vanilla extract and jatz/nut mixture with a spatula until fully combined.

  7. Pour into tin and bake for 40 minutes.

  8. Cake should be crisp on top when you remove from the oven.

  9. Allow to cool for 10 minutes.

  10. Remove cake from tin and allow to cool completely.

  11. Whip cream with icing sugar and vanilla extract until soft peaks form.

  12. Dollop cream on top of cake.

  13. Place cherries on top and sprinkle with chocolate shavings.
