Let the olives soak in the vodka, olive brine and lemon zest for a minimum of 1 hr and up to a couple days.
Add your cream cheese to a bowl and place it over a pot of simmering water to fully soften. Add 2.5 tbsp of the vodka/brine mixture and whisk it into a sauce basically. Add in lemon zest and black pepper.
Add in the softened butter a bit a time, making sure its mixed before you add more.
Slice olives thinly and pat dry.
Rub some oil on your mold, start with some of the dip, then add olives, a slice of blue cheese in the center and fill the sides with chives and green onion. Repeat 2-3 times.
Let it set for a few hours, up to a day.
