Soak dried shiitake mushrooms in hot water for 30 minutes
Squeeze out the juice from mushrooms and slice them
Mince garlic, slice shallots and ginger
Add shallots to cold oil and fry until golden brown, then strain out
Use some of the oil to sauté skin on pork belly until water evaporates and fat sizzles
Add minced garlic and ginger, sauté until fragrant
Add shiitake mushrooms, cinnamon, star anise, bay leaves, five spice, white pepper, and rock sugar
Pour in Shaoxing wine, light soy sauce, dark soy sauce, and oyster sauce
Add fried shallots and reserved mushroom water
Cover and simmer on low for 45 minutes
Add hard-boiled eggs and simmer for another 30 minutes
Serve over hot rice
