Easy Japanese style part mash potato salad

Mustard cream

  1. Score around the circumference of the potato and boil until tender. Twist of skin while warm.

  2. Hard boil several eggs.

  3. In a large bowl mix all dressing ingredients.

  4. Add potatoes and eggs to the bowl.

  5. Chop and mix with a spoon.

  6. Toss in the remaining ingredients, saving a little red onion and capers to decorate the top.
