Kick things off by preheating your oven to a cozy 150°C.
Grab a mixing bowl and cream together the butter and icing sugar until it’s looking light and fluffy – like a cloud on a sunny day!
Stir in that dash of vanilla and pinch of salt. Mix it well, friends!
Add in the flour and keep mixing until you’ve got yourself a nice dough.
Press the dough into a lined baking tin and let it chill in the freezer for 15 minutes. Patience is a virtue!
Cut the dough into your desired cookie shapes and bake for 40 minutes or until they’re golden brown and tempting.
Might need to give those cookies a quick recut while they’re hot – I did, and it was totally worth it.
Let them cool a bit before you dive in. I know, the wait is tough but oh, so rewarding!
