Lemon Macaron Ganache
  1. Heat the cream (don’t boil)

  2. Add lemon zest, let it infuse 5 min

  3. Pour hot cream over white chocolate

  4. Wait 1 min, then mix until smooth

  5. Add lemon juice (after emulsification)

  6. Add butter

  7. Blend if possible

  8. Chill 4–6 hours (covered)
