Ingredients
8 oz rice noodles or long cut pasta
½ cup creamy peanut butter
⅓ cup tamari or soy sauce
2 tbsp honey
¼ cup Thai red curry paste
1 tbsp fresh ginger, grated
2 carrots, shredded
2 bell peppers, thinly sliced
1 tbsp + ¼ cup sesame oil
8 oz halloumi cheese, cubed
6 cloves garlic, chopped
½ cup fresh basil, chopped
½ cup fresh cilantro, chopped
2 green onions, sliced
3 tbsp toasted sesame seeds
3 tbsp chopped peanuts
2 tbsp lime juice
Cook noodles as per package directions. Drain and toss with carrots and peppers.
Blend peanut butter, soy sauce, honey, curry paste, ginger, and water until smooth. Pour over warm noodles.
Heat sesame oil in a skillet. Cook halloumi until golden. Remove.
Add more sesame oil, garlic, and chili flakes to skillet. Cook until crisp.
Toss halloumi with garlic oil, herbs, peanuts, and sesame seeds. Serve over noodles with extra chili oil.
