French Onion Twice Baked Potatoes
  1. Preheat oven to 400°F. Wash and dry potatoes. Poke holes in each potato, rub with olive oil, sprinkle with salt, and bake for 30-45 minutes.

  2. Thinly slice onions and caramelize them in a pan with oil and butter until deeply golden brown. Add garlic, thyme, beef stock, and balsamic vinegar. Simmer until most of the liquid is gone.

  3. Slice off the top of the baked potatoes, scoop out the inside, mix with caramelized onions, heavy cream, and gouda. Restuff the potatoes and bake. Top with more gouda, bake until cheese is golden brown. Garnish with fresh thyme.
