Instructions:
crush the basil leaves in a mortar and pestle
puree the onion in a food processor
blend the garlic and olive oil with a staf mixer
blend the San Marzano tomatoes
Cooking
heat a large pan on medium low heat
each step of the way, taste and season with salt and pepper
add the garlic puree to the pan and cook for a few minutes
add the onion puree and continue cooking
add the basil
continue cooking at low heat
add the tomato paste
cook for about 5 minutes
make space in the center of the pan for the wine
reduce the liquid by half
run the spatula across the pan and check if the sauce keeps its shape and doesn't flow back into the empty space like a liquid
add the tomatoes and mix
cook on low heat for 30 minutes
