Ginger Choc Chip Cookie
  1. Heat the oven to 160°C on fan bake.

  2. Roughly chop the chocolate and ginger.

  3. Place the sugars and oil in a mixer bowl and mix until fully incorporated.

  4. Add the water, salt, and vanilla, then mix until fully incorporated.

  5. Sift the flour and baking soda into the mixer bowl and mix on low until just combined.

  6. Fold the chocolate and ginger chunks into the mixture.

  7. Measure each cookie to your desired size and roll into balls.

  8. Bake the cookies for 13 minutes at 160°C.
