Marinate Chicken
Combine paprika, pepper, salt, onion powder, cumin, coriander, allspice, and turmeric.
Rub three-quarters of the spice mix onto chicken thighs.
Add minced garlic, olive oil, and lemon juice to chicken. Marinate.
Cook Chicken
Cook chicken thighs 4-5 minutes per side until browned.
Remove chicken and set aside.
Cook Rice
Cook chopped onion with cooking juices and remaining spice mix.
Stir in rice and toast briefly.
Add chicken stock and mix.
Bring to a boil, cover, and simmer on low heat for 10 minutes.
Serve garnished with raw onion and spring onion.
