In a mixing bowl, combine the peanut butter, Greek yogurt, honey or maple syrup, and vanilla extract until smooth.
Stir in the rolled oats and a pinch of salt until everything is well mixed.
Press the mixture firmly into a lined baking dish to create an even layer.
Melt the dark chocolate chips in a microwave or over a double boiler until smooth.
Pour the melted chocolate over the oat mixture and spread it evenly.
Refrigerate the bars for at least 2 hours or until set.
Once set, cut into bars and enjoy!
