  1. Slice the eggplant into ½ inch thick slices

  2. Dip the eggplant slices in beaten eggs, then coat in breadcrumbs

  3. Fry the breaded eggplant slices in olive oil until golden brown

  5. Bake in the oven at 375°F until the cheese is melted and bubbly
