Pie Cookies
  1. Assemble four to six canning rings & lids with the metal lids sides facing upward. Lightly oil the insides & bottoms.

  2. Unroll or 'unshell' a store-bought prepared pastry dough circle onto a floured surface.

  3. Cut circles, each about 1" wider than the prepared lids.

  4. Work & shimmy these pastry circles into each prepared lid & evenly press up the sides. Trim the edges along the rims.

  5. Fill each with a scant 2-3 tbsp of your favourite jam.

  6. Cut a remaining unrolled pastry circle into shapes or strips for lattice & decorate the tops of the jam-filled pastries.

  7. Lightly brush with milk.

  8. Set pies on a baking sheet.

  9. Bake in centre of a preheated 350°F oven until lightly golden, about 20min.
