Poke holes all over the sweet potato and cook in the microwave for 6 mins (1000W)
Heat olive oil in a pan and fry the leeks until soft. Season well.
Mix the eggs with a splash of milk in a large bowl, then add the herbs, leek and sweet potato and combine.
Pour into a lined baking dish, then top with chunks of the goat's cheese, and some freshly ground black pepper to finish.
Bake in the oven for 20 mins.
