Preheat oven to 400F
Peel and chopped carrots and roughly chopped white onion. Add to a sheet pan with peeled garlic cloves.
Drizzle with olive oil, curry powder, smoked paprika, and salt and pepper, and mix to combine
Roast 45 to 50 minutes until tender and golden
Transfer roasted veggies to a blender or pot
Add binr broth, tofu, grated ginger, lemon juice, and chili flakes
blend until creamy and smooth. Adjust seasoning as needed.
Pour into bowls. Top with grated Parmesan, fresh basil, a squeeze of lemon, and toasted seeds.
