Toss thin sliced chicken breast in 1 tsp paprika, ½ tsp garlic powder, onion powder & salt.
Heat 1 tbsp olive oil & add chicken. Remove chicken when fully cooked.
In the same pan (no need to clean), add uncooked rice and toast for 2-3 minutes (until it smells nutty).
Then, stir in tomato paste along with ½ tsp garlic powder, onion powder, and salt, and ¼ tsp cumin and chili powder.
Pour in chicken broth, stir well, and bring to a low boil before reducing heat to low. Cover & simmer for 12-15 minutes or until liquid is absorbed. If needed, remove from heat and leave covered for a few more minutes!
Layer rice, chicken, melted queso & enjoy!
