Heat 2 tablespoons olive oil in a pan and cook shrimp seasoned with Cajun seasoning and paprika for 1 minute on each side. Remove and set aside.
In the same pan, add 1 tablespoon olive oil and 1 tablespoon butter. Sauté diced onions and minced garlic for 30 seconds on medium heat.
Add peppers and sauté for 30 seconds.
Deglaze the pan with white wine, broth, or water.
Add pasta water, heavy whipping cream, salt, chili flakes, and Parmesan cheese. Let the sauce simmer and thicken for a few minutes.
Add cooked pasta to the sauce and mix well.
Add the cooked shrimp back into the pan and combine.
