  1. Begin by cutting the paneer into cubes.

  2. In a mixing bowl, combine salt, red chilli powder, black pepper, cornstarch, and a small pinch of baking soda.

  3. Add a little water to the mixture, stir well, and coat the paneer cubes evenly.

  4. Heat oil in a pan and fry the paneer until it turns golden and crispy.

  5. Once done, remove some excess oil from the pan and add the chopped garlic and ginger.

  6. Next, add the green pepper, red onion, spring onion greens, and green chillies to the pan.

  7. Sauté the mixture on high heat.

  8. Pour in the light soy sauce, dark soy sauce, chilli garlic sauce, and a splash of rice vinegar.

  9. Season with just a bit of salt, then gently fold in the fried paneer pieces.

  10. To thicken the sauce, add the cornstarch slurry and mix everything together.

  11. Finally, toss the ingredients well, garnish with fresh coriander stems, and serve.
