Heat olive oil in a large pan over medium-high heat
Add diced chicken breast and cook until golden
Add thinly sliced onion and cook until softened
Stir in garam masala, ground cumin, turmeric, paprika, and chilli powder
Add diced red pepper and cook for 2-3 minutes
Pour in chicken stock and light coconut milk
Simmer for 10-15 minutes until chicken is cooked through
Stir in frozen peas and cook for 2-3 minutes
Remove from heat and stir in Greek yoghurt
Season with salt and pepper to taste
Cook basmati rice according to package instructions
Serve curry over cooked basmati rice
