Chicken Tikka Masala With Basmati Rice
  1. Heat olive oil in a large pan over medium-high heat

  2. Add diced chicken breast and cook until golden

  3. Add thinly sliced onion and cook until softened

  4. Stir in garam masala, ground cumin, turmeric, paprika, and chilli powder

  5. Add diced red pepper and cook for 2-3 minutes

  6. Pour in chicken stock and light coconut milk

  7. Simmer for 10-15 minutes until chicken is cooked through

  8. Stir in frozen peas and cook for 2-3 minutes

  9. Remove from heat and stir in Greek yoghurt

  10. Season with salt and pepper to taste

  11. Cook basmati rice according to package instructions

  12. Serve curry over cooked basmati rice
