Susan Sarandon's Sun-dried Tomato Pasta Sauce
  1. Bring a large pot of salted water to a boil.

  2. Sauté chopped garlic and onion in olive oil until soft.

  3. Add sun-dried tomatoes and cook for a few more minutes.

  4. Lower the heat and stir in a log of goat cheese until melted and smooth.

  5. Season with salt and pepper, then turn off the heat.

  6. Cook your pasta according to the package directions, reserving a cup of pasta water before draining.

  7. Reheat the sauce, stirring in some of the pasta water to create a creamy consistency.

  8. Toss in the cooked pasta until well coated.

  9. Serve warm, topped with grated Parmesan cheese.
