Olympic Chocolate Muffins
  1. In a large bowl, whisk together sugar, egg, oil, coffee, vanilla, and salt until smooth.

  2. Sift in baking soda, flour, and cocoa powder. Pour in warm buttermilk and mix just until combined.

  3. Line muffin tin with tulip or regular liners and fill ¾ full. Add chocolate chunks on top.

  4. Preheat oven to 350°F. Raise to 425°F for 7 minutes, then lower to 350°F and bake for 10–12 minutes until edges are set.

  5. Warm cream and pour over chopped chocolate. Let rest for 1–2 minutes, then stir until smooth and glossy.

  6. Use a paring knife to remove muffin centers and pipe ganache inside.

  7. Enjoy warm for a molten, lava-style chocolate center.
