To a pot of water add cloves, cinnamon sticks, orange peel and grated ginger.
Simmer for 15 mins on low heat
Add dried sorrel to pan (wash before use)
Add more water if needed
Add whole pimentos and stir
Simmer for 20 mins on low heat
Once the sorrel has simmered, you can leave to steep over night (I did) it brings out much more flavour but a minimum of 4 hours is required
Strain the sorrel into another bowl and strain again for extra smoothness
Sweeten with brown sugar - I used some simple syrup also but this is optional
Add white rum (to your liking) and red label wine (I didn't have any red label wine so I didn't use any)
