Fried oyster mushrooms in soy-hoisin sauce
  1. Tear the oyster mushrooms into bite-sized pieces. Heat 1 tbsp oil in a large frying pan over high heat and fry the mushrooms until they are lightly browned and the water has completely evaporated. Remove the mushrooms from the pan and set aside.

  2. Heat 2 tbsp oil in the same pan over medium heat. Add the chillies and fry for about 30 seconds until fragrant. Add the garlic and ginger and fry for another 30 seconds.

  3. Add the white part of the spring onions (quartered) to the pan and sauté briefly until slightly softened.

  4. In a small bowl, mix the soy sauce, brown sugar, water, hoisin sauce and cornflour well. Pour the mixture into the pan and bring to the boil, stirring until the sauce thickens slightly.

  5. Add the fried oyster mushrooms and the green part of the spring onions (cut into fine strips) to the sauce. Mix everything well until the mushrooms and spring onions are evenly coated with the sauce.

  6. Arrange the oyster mushrooms with sauce on plates. Garnish with roasted sesame seeds and serve with cooked rice.
