Single Serve Brownie (small Batch)
  1. Preheat the oven to 350 degrees F. Well grease a large (10 ounces to very top or about 4.25 inches wide across the top) with butter or cooking spray. Add a circle of parchment paper to the bottom. Or you can do the same to two muffin cups.

  2. Add the butter and brown sugar to a microwave-safe medium mixing bowl and microwave for about 30 seconds or until the butter is melted. Use a fork or whisk to well stir the butter and sugar together to combine.

  3. Add the egg yolk and vanilla to the mixture and mix with a fork or whisk to well combine. The mixture should become lighter in color.

  4. Add the flour, cocoa powder, and pinch of salt then fold together with a rubber spatula. Fold in the chocolate chips, if using.

  5. Add the batter to the ramekin (or divide between the muffin cups). Bake the ramekin for 24-26 minutes (or two muffin cups for 16-18 minutes). The brownie is done when the edges are set and a toothpick in the center comes out with fudgy/moist brownie crumbs, but not wet batter.

  6. Allow to cool and enjoy!
