Easy Creamy Salmon Florentine
  1. Pat salmon fillets dry and season with salt, pepper, and paprika.

  2. Heat olive oil and butter in a large skillet over medium-high heat. Place salmon fillets skin-side down and cook for 4-5 minutes until golden brown.

  3. Turn the fillets over and cook for another 2-3 minutes, then remove from the pan and set aside.

  4. In the same skillet, add minced garlic and cook until fragrant (about 30 seconds).

  5. Pour in heavy cream, parmesan, Dijon mustard, lemon juice, and red pepper flakes. Stir well and let simmer for 2 minutes.

  6. Stir in fresh spinach and cherry tomatoes (if using), cooking until spinach wilts.

  7. Nestle the salmon fillets back into the sauce, spooning some over the top. Let simmer for 2 minutes to heat through.

  8. Plate the salmon with sauce and enjoy with your favorite sides.
