Coconut Snowball Truffles

Ingredients:

1 ½ cups unsweetened shredded coconut

¼ cup coconut flour

¼ cup maple syrup

¼ cup coconut oil, melted

1 teaspoon vanilla extract

Pinch of sea salt

¼ cup dark chocolate chips (optional for drizzling)

Directions:

In a large mixing bowl, combine shredded coconut, coconut flour, maple syrup, melted coconut oil, vanilla extract, and sea salt.

Mix until the ingredients are fully combined, and the mixture becomes sticky.

Using your hands or a small cookie scoop, form the mixture into 1-inch balls and place them on a parchment-lined baking sheet.

Chill the coconut snowballs in the refrigerator for 20-30 minutes to firm up.

If using chocolate, melt the dark chocolate chips in a microwave-safe bowl, heating in 15-second intervals and stirring in between until fully melted.
