Cook the pasta in 8 minutes until al dente (slightly firm) in water with 2 tbsp salt
Sauté the spinach with a pinch of salt in a small drizzle of oil over high heat for 4 minutes
Add the zest of the lemon, the juice of half a lemon, the heavy cream and cheese, and cook over high heat for 5 minutes until the sauce thickens
Meanwhile, sauté the panko with a pinch of salt and a small drizzle of olive oil until golden brown in about 4 minutes
Add the pasta with a splash of the cooking liquid and heat over high heat for 2 more minutes
