Season the chicken breasts with smoked paprika, garlic powder, salt, and pepper.
Heat olive oil in a large ovenproof skillet over medium-high heat.
Sear the chicken breasts for 2-3 minutes on each side until browned.
Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through.
While the chicken is baking, prepare the vinaigrette by combining chopped olives, walnuts, red wine vinegar, Dijon mustard, and olive oil in a bowl. Mix well.
Remove the chicken from the oven and let it rest for 5 minutes.
Serve the chicken breasts topped with the olive walnut vinaigrette and garnish with fresh parsley.
