Prep the grapes: Wash grapes in ice water with about ½ teaspoon baking soda. Let them soak for 10 minutes, then rinse and dry completely. Insert a toothpick into each grape and place them in the freezer until ready to use.
Make the candy coating: In a pot, combine sugar, water, corn syrup, and lemon juice. Mix before turning on the heat. Bring to a boil over medium heat, stirring occasionally at first. Once it starts boiling, stop stirring and let it cook until it reaches 285–300°F.
Add flavor and color: Remove from heat. Stir in your flavoring and white food coloring until it turns opaque. Then add a small amount of your desired color and gently swirl it in.
Dip the grapes: Take grapes out of the freezer. Dip each grape into the candy mixture, letting excess drip off in a swirl motion. Place on parchment paper.
Decorate (optional): If adding toppings, do it immediately—these harden fast!
Set & enjoy: Let them cool and harden (this happens within seconds). Store in the fridge until ready to eat.
