Honey Garlic Butter Zucchini
  1. Preheat the oven to 350°F convection or 375°F convention

  2. Slice the zucchini lengthwise and score the top. Dry the cut section with a paper towel and set aside

  3. Heat a cast iron pan or heavy skillet over high heat. Add olive oil, salt the cut side of the zucchini and place in the pan face down. Place a heavy pan on top to press the zucchini down. Sear for 6-8 minutes until the tops are browned

  4. Flip the zucchini over and place in the oven for 10-15 minutes (keep for another 5 minutes if you prefer it well done)

  5. Place a small pan on medium heat. Add oil, butter, honey, salt, garlic, lemon juice and zest. Heat for 2 minutes

  6. Remove the zucchini from the oven and spoon the butter mixture over each zucchini. Squeeze additional lemon juice on top if desired. Serve and enjoy
