Salsa Roja Chile de Arbol
Remove stems and seeds from chiles.
Boil tomatoes, chile de arbol, onion, and garlic in water until tomatoes peel. (10 minutes)
Add guajillo chiles to boiling water.
Transfer 3 tomatoes, chile de arbol, some onion, all garlic, and guajillo chiles to blender.
Add some boiling water.
Blend until very fine.
Add 2 tsp salt, pepper, and garlic.
Add remaining 2 tomatoes and remaining onion.
Pulse until combined.
Add salt to taste.
Salsa Roja Chile Piquin
Boil 5 tomatoes in water.
Add 3 garlic cloves and ½ c chile piquin to boiling water.
Boil for a few minutes.
Transfer 3 tomatoes, chile piquin, and garlic to blender.
Add 3 tsp salt, pepper, and garlic.
Blend until very fine.
Add remaining 2 tomatoes and a little chile piquin.
Pulse for a few seconds.
