Spicy Salmon Rice Muffins
  1. Preheat oven to 400°F and cut each nori sheet into 4 squares to yield 12.

  2. Toss cubed salmon with sesame oil, soy sauce, honey, scallions, spices, and salt. Marinate for 30 mins to 4 hrs.

  3. Line each muffin slot with a square of nori and press in 1 heaping tablespoon of cooled rice.

  4. Add 4–5 cubes of marinated salmon on top of each rice base.

  5. Bake for 15–17 minutes. Optional: broil for 1–2 mins for extra browning.

  6. Mix mayo, Sriracha, and honey for spicy mayo.

  7. Let muffins cool slightly, then top with avocado, sesame seeds, and drizzle spicy mayo.
