Preheat oven to 400°F and cut each nori sheet into 4 squares to yield 12.
Toss cubed salmon with sesame oil, soy sauce, honey, scallions, spices, and salt. Marinate for 30 mins to 4 hrs.
Line each muffin slot with a square of nori and press in 1 heaping tablespoon of cooled rice.
Add 4–5 cubes of marinated salmon on top of each rice base.
Bake for 15–17 minutes. Optional: broil for 1–2 mins for extra browning.
Mix mayo, Sriracha, and honey for spicy mayo.
Let muffins cool slightly, then top with avocado, sesame seeds, and drizzle spicy mayo.
