  1. Preheat oven to 180ºC (350°F).

  2. Grease an 9x9" baking tin and line with parchment paper.

  3. Whisk butter, sugar, ricotta, eggs and vanilla in a large bowl.

  4. Stir together flour, baking powder, and salt.

  5. Combine the flour mixture into the butter mixture.

  6. Transfer batter into prepared pan, spreading into an even layer.

  7. Toss together cranberries and sugar; sprinkle over batter.

  8. Bake until golden brown and a wooden pick inserted in centre comes out clean, about 1 hour.
