Add olive oil to your pan and let heat up.
Add zucchini, onion, and some salt to the pan then top with lid. Let cook for at least 20 mins. Stirring occasionally. You want the zucchini to get super soft not brown. If not soft leave another 5-10 mins.
Once soft break it up with your spatula a bit.
Start water boiling for your pasta
Add garlic to the zucchini add the top back and cook until pasta water is boiled.
Add pasta to boiling water.
While that cooks add coconut milk, salt, pepper, and Italian seasoning to the zucchini and stir. Leave the lid off you want all the water to evaporate.
Once evaporated add in Parmesan cheese. Stir until melted
Add in sausage.
Once pasta is done add some pasta water to the zucchini and stir. Then add the pasta.
Serve with red pepper flakes.
