Day before, if desired: In small saucepan, over low heat, cook shortening with flour 15 minutes, stirring occasionally.
In medium saucepan with metal handle, simmer wine, celery salt, pepper, garlic, onion, salt and mushrooms 5 minutes. Add broth; simmer uncovered 15 minutes, stirring occasionally.
Into broth, slowly stir flour mixture; simmer until thickened. Bake uncovered 30 minutes. Remove from oven; skim off surface fat; stir in hot light cream; strain through fine sieve. Makes about 3-½ cups. Reheat in saucepan as sauce for chicken pies, cooked vegedatas, et cetera.
