Preheat oven to 150 degrees Celsius (300 degrees Fahrenheit)
In a bowl, combine rolled oats, chopped pistachios, coconut flakes, pumpkin seeds, and salt. Mix until evenly distributed
In a small saucepan over low heat, combine maple syrup, olive oil, and light brown sugar. Stir until sugar is fully dissolved
Remove from heat and pour the wet mixture over the oats and nuts. Stir until everything is evenly coated
Spread the mixture on a parchment-lined baking sheet
Bake for 35-40 minutes, stirring and flipping at the 15-20 minute mark
Remove from oven when golden brown. While still hot, add dried sour cherries and mix through
Cool completely before storing
