Preheat oven to 400°F (200°C).
Season chicken with salt/pepper. Dip in a little oil or egg, coat in breadcrumbs.
Pan-sear chicken in oil until golden (about 2–3 min per side).
Place chicken in a baking dish, cover with tomato sauce, sprinkle mozzarella (and Parmesan if using).
Bake 20 minutes, until chicken is cooked and cheese bubbly.
While baking, boil pasta or cook rice.
Toss salad: chop lettuce + tomato/cucumber, dress with oil + vinegar/salt/pepper.
