Cheesy Black Bean Dip
  1. Preheat the oven to 400 degrees.

  2. Chop the onions, garlic, jalapeno, and scallions.

  3. On the stove heat a saute pan on medium, add the oil and saute the onions until translucent and slightly browned, then add the garlic and cook for another 2 minutes. Stir occasionally so it doesn’t burn.

  4. Add in the lime juice and remove saute pan and set aside.

  5. Place the black beans, onions/garlic, green onion, sour cream, oregano & salt/pepper in a food processor or blender until smooth. (Set some black beans aside before blending if you want it to be more chunky).

  6. Remove and mix in any remaining black beans.

  7. Taste and adjust seasonings if needed.

  8. Evenly fill the baking dish with bean mixture then top generously with the shredded cheese.

  9. Bake until the cheese is melted and light brown on top/edges, approximately 20-25 minutes.

  10. Enjoy right away or store in the fridge for up to 1 week.
