Remove the seasoning pack from beans. Set aside.
Rinse beans in a colander removing any debris and take out bad beans. Pour into a large pot and cover with 10 cups cold water boil rapidly for 5 minutes and reduce to simmer (2 or 3 on stove) for 1 hour and 30 minutes (quick option) OR Soak on the counter for 8 hours or overnight (longer option).
Drain water from beans in colander and add whole container of chicken broth to pot. Bring to a boil.
Add sautéed onion, celery, and sausage to pot. Simmer.
Add the bean seasoning packet, slap your mama, onion powder, garlic powder, and cumin to the pot (measured with my heart). Mix well.
Serve with cornbread or rice on the side, if desired.
