Brie and Butternut Squash Gratin

Ingredients:
Preheat the Oven. Preheat your oven to 375°F (190°C). Lightly grease an 8x8 inch or similar-sized baking dish.
Sauté Aromatics: Heat the olive oil in a large skillet over medium heat. Add the sliced onion and cook until softened and translucent, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant, being careful not to burn it.
Cook the Squash: Add the diced butternut squash to the skillet. Stir in the dried thyme and ground nutmeg. Season with salt and pepper. Cook, stirring occasionally, for about 8-10 minutes, until the squash is slightly tender but still has a bit of bite.
Add Liquid: Pour in the vegetable broth (or milk) and heavy cream (if using). Bring to a gentle simmer and cook for another 5-7 minutes, allowing the liquid to reduce slightly and the squash to become more tender. Stir occasionally.
Assemble the Gratin: Transfer the butternut squash mixture to the prepared baking dish. Spread it out evenly.
Add the Brie: Arrange the slices or cubes of Brie cheese evenly over the top of the butternut squash.
Add Parmesan (Optional): If using, sprinkle the grated Parmesan cheese over the Brie.
Bake: Bake in the preheated oven for 30-40 minutes, or until the Brie is melted, bubbly, and lightly golden, and the butternut squash is tender.
Rest and Garnish: Let the gratin stand for a few minutes after removing it from the oven. Garnish with fresh chopped parsley or chives before serving.
