Preheat your oven to 350°F.
Press the pie crust into a baking dish, prick the bottom then Bake for 10 minutes.
Slice the tomatoes, sprinkle with salt, and let them sit on paper towels to drain.
Make caramelized onions by thinly slicing them cooking with olive oil, butter, and sugar over medium heat for about 20 minutes until golden. Add a pinch of salt at the end.
In a bowl combine cheese, mayo, sour cream, garlic powder, chives, chipotle peppers, salt, pepper, and caramelized onions.
Spread the mustard on the bottom of the baked pie crust, sprinkle a thin layer of shredded cheese, then the sliced tomatoes, then the cheese mixture.
Bake for 25 minutes, then broil for 2-3 min until the top is golden.
Let it cool for 15 minutes before slicing.
