Start by heating olive oil in a cold pan, then add the pancetta, carrot, onion, celery, spring onion, and ginger to create the Hong Kong Sofrito. Cook these ingredients until they are about 80% cooked through.
Next, add the finely chopped garlic and continue cooking until the vegetables are soft.
Once done, remove the sofrito from the pan and set it aside.
In the same pan, add the pork and beef mince, browning it thoroughly.
Stir in the tomato puree and allow the mixture to caramelize.
Add a splash of milk and mix until it is fully incorporated.
Deglaze the pan with red wine, reducing the liquid by about half.
Return the cooked sofrito to the pan and, if desired, sprinkle in some MSG.
Pour in the stock and let the mixture simmer on low heat for as long as possible.
Finally, season the sauce with soy sauce to taste and serve the Chinese Bolognese hot.
