Mix the yogurt, peanut butter and maple syrup together
Spoon dollops onto a plate lined with parchment paper. Press popsicle sticks into each dollop. Top them with peanuts
Freeze for about 2 hours
Melt the chocolate in the microwave (with the coconut oil). Dip the pops in the melted chocolate. Make sure that the pops are fully frozen before dipping. Let the chocolate cool down for a few minutes before dipping. Dip the pops quickly because the chocolate sets very fast. Melt the chocolate again if it starts to set in the bowl
Store in an air-tight container in the freezer. Let defrost for about 20 minutes before serving
