Honey Almond Granola With Coconut Oil*
  1. Combine dry ingredients: In a large bowl, pour in oats, almonds, salt, and brown sugar, and optional cinnamon. Stir to combine.

  2. Combine wet ingredients: In a small microwaveable bowl, combine honey and coconut oil and heat for 40 seconds. Stir to dissolve the coconut oil, then add vanilla and almond extracts.

  3. Preheat oven to 350 degrees. Line a baking pan with parchment paper up the sides, or with a Silpat.

  4. Pour the honey mixture over the oats and stir so they are evenly coated. Add blueberries. Pour mixture evenly onto lined pan. Keep your spatula to flip/stir.

  5. Bake for 5 minutes, then stir. Return to oven for 8 more minutes, or until granola is lightly browned.

  6. Let granola cool completely. Then break into clusters and store in airtight container.
