Cook ground beef or chicken in a skillet until no longer pink about 5 minutes. Drain fat.
Add onions, garlic and seasonings. Cook for 2 minutes.
Add enchilada sauce and 2 oz of shredded cheese and cook for 2 minutes.
Add remaining shredded cheese and bake in the oven at 450 degrees for 5 minutes until melted and bubbly.
Optional toppings: sliced jalapeño, sour cream, green onions, cilantro.
Serve with chips or tortillas
