Chocolate Veggie Muffins
  1. Combine the dry ingredients (flour, cocoa powder, baking powder, baking soda, salt, sugar) in one bowl.

  2. In another bowl, whisk together the wet ingredients (eggs, milk, oil).

  3. Grate the zucchini and carrots and add them to the wet ingredients.

  4. Finely chop the baby spinach and add it to the wet ingredients.

  5. Fold the wet ingredients into the dry ingredients until just combined.

  6. Scoop the batter into a muffin tin and bake at 350°F until a toothpick inserted comes out clean.
