Giant Hot Pockets
  1. Mix starter: combine 1 cup "00" flour, 1 ½ tsp yeast, and 1 cup warm water. Let sit for 45 minutes

  2. Add flour slowly to the starter, then add sugar and salt

  3. Once dough forms a ball, knead on a table for 5-10 minutes, adding flour as needed until not too tacky

  4. Place dough in a greased bowl, cover and proof for 1 hour or until doubled

  5. Mix pizza sauce: combine crushed tomatoes, oregano, thyme, salt, garlic powder, rosemary, olive oil, and sugar

  6. Punch down dough and cut into 4 sections

  7. Roll out each section and fill with pizza sauce, mozzarella, and desired toppings

  8. Fold dough over filling, roll edges underneath, and tuck ends underneath

  9. Poke holes in the top of each pocket

  10. Bake at 450°F for 10-15 minutes until golden brown

  11. Brush with garlic butter before serving
