In a large skillet with a lid, heat butter over medium heat. Add onion and sauté until soft and translucent, 8 to 10 minutes.
Add cabbage, water, raisins, and apple slices. Cover and cook for 5 minutes. Stir in beet greens and cook for another 6 to 7 minutes.
When the greens are tender, stir in vinegar, maple syrup or honey, and salt to taste. Serve hot.
