To make the bang bang sauce, combine the Mayonnaise, soy sauce, sriracha, honey, vinegar, garlic powder, and ½ tsp. salt & black pepper in a large bowl. Whisk until smooth. Set aside.
In a separate large bowl, combine the chicken, olive oil, and seasonings (paprika, garlic powder, salt, and black pepper). Toss until well coated in the seasonings.
Layer 3-4 pieces of the seasoned chicken onto each wooden skewer. Place the chicken kebabs on your air fryer rack.
Place ⅓ cup of the bang bang sauce in a separate bowl, reserving the larger portion for after baking. Use the separated ⅓ cup bang bang sauce to brush onto the chicken kebabs.
Bake at 400F for 12-15 minutes, flip halfway through, until golden (internal temperature reaches 165F).
Enjoy warm with freshly chopped parsley and the reserved bang bang sauce.
